We present a home-style version of a beverage found on the seasonal cocktail list. This is a batch premix that is bursting with the flavours associated with Christmas time, rendering it perfect for a holiday party. Reserve the remaining syrup for morning drinks, desserts, or for another batch of this cocktail.

For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Put every components in a saucepan, bring to a light boil, stirring to dissolve. Next, turn off the heat allowing it to cool completely. Transfer into an sterilised bottle, seal and store in the refrigerator, it can be stored for up to a month.
To make Batch Mix: Mix all the liquids into a sizeable container, leave to sit for one hour, then pass it through preferably using cheesecloth, making it perfectly clear.
To serve: Add 85ml from the cocktail base to a mixing glass packed with ice, and agitate lightly for a minute until cold. Pour to a cold coupe glass or a similar vessel, decorate with some cranberries and finish using a brief mist with the mandarin essence over the top.
